Spring Onion Soup, Maryland

     This soup is for someone who has baby onions growing in the garden or who knows someone who has baby onions growing in the garden.

Ingredients:

2 cups cut-up small spring onions with tender green tops
3 cups strong chicken stock
3 tablespoons butter
1 tablespoon flour
1-1/2 cups cream
salt and white pepper to taste

     Simmer the onions in the stock about 15 minutes, or until soft. Melt the butter, stir in the flour, cream, salt, and pepper. Add the stock mixture slowly, stirring until it is well blended and hot.
