Rachel Baum's Carrot Bread

    The note on my recipe card says, "Extremely good served still warm with cream cheese."

Ingredients:

4 eggs
1 cup salad oil
2 cups sugar
3 cups unsifted flour (half white; half brown)
2 teaspoons baking powder
1-1/2 teaspoons soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon cloves
2 cups shredded carrots

     Beat eggs, add sugar, and mix until thick. Add oil, beating thoroughly. Stir in other ingredients. Pour into well greased pans and bake at 350 degrees for 45 minutes to 1 hour. Makes 1-1/2 big loaves or 2 small loaves. Or you can bake it in a cake pan.
